My husband and I needed to come up with a compromise for brussels sprouts. He loves them roasted, but I don’t enjoy the burnt taste that happens quite a bit in our oven.
This recipe pleased us both — and Kraig even came back for seconds!
Maple Brussels Sprouts
Serves 8
2 pounds fresh Brussels sprouts
3 tablespoons butter, melted
3 tablespoons olive oil
4 tablespoons maple syrup
beef or turkey bacon, fried and crispy (optional)
First, clean your Brussels sprouts in a kitchen strainer. On the cutting board, remove any woody stems and yellow or brown outer leaves. Cut each one in half. Then toss them in a bowl with butter, olive oil, salt and pepper. Spoon them out onto a baking tray lined with parchment paper. (I added a little more salt and pepper at this point.)
Bake at 375 degrees for 40 minutes. Halfway through, stir them and pour maple syrup over the top, so that they’ll caramelize nicely.
We added some homemade beef bacon to ours at the end. Yum! (Check out my friend Christine’s recipe for beef bacon.)
